White Chocolate Ganache Cake

 
 
 

We recently made this classic cake to celebrate a friend’s birthday. We love this moist and flavorful cake and hope you do too. You’ll need a scale for this one. It’s a Delicious Australia recipe and so comes in grams and milliliters.

Ingredients for the Cake

  • 200 g salted butter at room temp.

  • 250 g baking sugar

  • ½ teaspoon vanilla

  • 2 eggs

  • 250 g flour, sifted

  • 1 ½  teaspoons baking powder

  • 1 ½ tsp salt

  • 205 ml milk

  • 135 g white chocolate, melted (over double boiler)

Ingredients for the Ganache

  • 375 ml heavy whipping cream

  • 625 chopped white chocolate (or white chocolate chips)

Directions for Goat Cheese Quiche with Potato Crust

Preheat oven to 350º and grease and flour three 6” cake rounds, and line with parchment.

  1. Heat the milk and white chocolate until melted and combined, cool to room temperature.

  2. Using the paddle attachment in a standup mixer beat the butter and sugar until pale and fluffy. Add the eggs, one at a time, mixing well. Add vanilla.  

  3. Sift the dry ingredients and alternate flour mixture and milk mixture, beginning and ending with flour, fully incorporating after each addition. Add cooled white chocolate and mix well, being careful not to overbeat. Divide evenly among the three cake pans. (Use a scale for accuracy.)

  4. Bake for about 30-40 minutes, or until a toothpick inserted in the center comes out clean. Place cakes on wire rack to cool for about 10 minutes then turn out onto wired rack and cool completely.

  5. For the ganache: Heat the cream and add the white chocolate pieces, whisk until completely melted and smooth. As the mixture cools it’ll harden. Once it’s firm enough to use spread on the bottom layer of the cake and repeat with remaining layers and crumb coat the cake; chill for 20 minutes. 

  6. Frost and smooth the sides with the remaining ganache. You can use a scalloped cake comb or other to create textured effect on the sides. Smooth the top and chill for 20 minutes until frosting is cold and firm.

  7. Use the rest of the ganache to decorate as wanted. Sprinkle shaved white chocolate on top and decorate with flowers or other celebratory items. 

    To make cupcakes reduce the baking time, start checking at 15 mins or so.
